Raisin-Orange Sauce

The tart citrus flavor cuts the richness of roast pork. The raisins add a textural surprise. Goes will with Cubano-Style Pork Loin. Makes 2 cups; 1/3 cup per serving. Found in, "The Whole Foods Market Cookbook."

    Place the orange juice, wine, shallots, and raisins in a small sauce pan.

    Bring the sauce to a boil, and allow to cook until reduced by almost half, for about 30 minutes.

    Remove from heat, and whisk in the butter and parsley.
