Quick Fix Potato Soup

I prefer to make potato soup the long and fattening way, but this is a pretty good quick rendition that is also healthy.

SERVES 8 (change servings and units)

Ingredients

Directions

    Combine milk and water in a large saucepan over high heat and bring to a boil. Remove from heat and add instant potatoes. Stir vigorously with a whisk until well blended.

    Add 1/2 cup cheese until melted. Season well with garlic salt and pepper.
  3. 3
    Ladle the soup into a bowls and top with the remaining cheese, chives, sour cream, scallions, and bacon.

    Enjoy!
