A Dom Deluise recipe. This actually dates back to the Depression era. It's inexpensive, tasty and good for you. Make sure you use uncooked rice in this recipe. Serve with additional grated cheese.

    Heat oil in a pot and saute garlic until golden brown.
  2. 2
    Add onion, potato, rice, broth, water and parsley. Stir, bring to a boil, reduce heat and simmer for 1 hour, stirring occasionally.

    Stir in cheese and serve.

This was a fabUlous recipe! We are a family of 5, so, I dbld the recipe w/the exception of H2O; increased the chicken broth to 8 cups-('cuz it was too thick @ 4 cups) used 1tsp crushed garlic & 2tsp dried parsely. I'd recommend potato rolls w/this soup. TY for sharing!

    I can't believe I forgot to rate this recipe. I've been making it for 15+ years. We really love it at our house. It's fast, easy and economical. When I need a fast meal....when I'm too tired to cook a huge meal...actually anytime is a good time for this filling soup!

    I made this on Saturday and planned to freeze half, but DARN, I ate it all by yesterday! Except for using parsley flakes because I didn't have fresh, I followed the recipe and it is so simple to make. My mom made a simpler version (just half-beef-half-chicken broth, potatoes, rice and dried minced onion). It warms the soul. I'm going to try this again using Arborio rice, but already I wish I could give 10 stars. Thank you so much for posting and I'm honored to be the first to review it.

    I turned this into a vegan dish by using vegetable stock instead of chicken broth and by omitting the parmesan cheese. I used brown rice, also. It was absolutely DELICIOUS and my 5 children ate the entire pot! Even my baby girl, who just turned 1, ate 3 bowls of it. Will definitely make this again, especially on those nights my fridge and pantry are bare and I only have staples - as was the case tonight.
