Poor Knights or Rich Knights (Köyhät Ritarit)

SERVES 1 (change servings and units)

Ingredients

  • 1 slice French bread or coffee bread
  • 1 egg
  • 1 1/4 cups milk (3 dl)
  • 1 pinch salt

FOR FRYING

TOPPING

  • 1 tablespoon lingonberry jam
  • whipped cream (optional, to make "Rich Knights")

Directions

  1. 1
    Cut a thick slice of bread for each person, recipe set for 1 person.
  2. 2
    Whip the egg and mix in milk and a pinch of salt.
  3. 3
    Dip the slice in the milk and egg mixture.
  4. 4
    Fry until golden brown on both sides.
  5. 5
    Serve hot topped with a bit of lingonberry jam.
  6. 6
    If you top it all off with whipped cream, your "poor knights" become "rich knights".
