Polish Sausage, Potato Skillet

I came up with this recipe by combining what sounded good to me from other recipies. I was trying to come up with another way to use polish sausage. It is terrific. The beans can easily be left out if you prefer.

SERVES 6 (change servings and units)

Directions

    In a heavy fry pan with a lid heat oil on med/high and add onion, sausage and potato as you are doing your cutting.
  2. 2
    Add the sugar, applesauce, mustard, vineger, thyme and pepper to your taste.
  3. 3
    Stir and cover. Stir again about every 5 minutes until potatos are tender about 25 minutes.
  4. 4
    Remove cover and cook and stir at 5 minute intervals until desired amount of browning occurs.

This was great. Terrific for a busy weeknight. So convenient I will certainly put it on regular rotation during the school year. Had a peasant food stew delightfulness. I doubled the sausage and the mustard. And, since my fam tends to shy away from the sweet stuff, I cut the sugar a little and made sure to buy an applesauce that was not sugary.
