Pizza Casserole

A good kid pleaser-- and adults can add "toppings" as their taste buds desire.

SERVES 6 (change servings and units)

Ingredients

  • 2 (7 1/2 ounce) packages refrigerated biscuits

  • 1 (14 ounce) jar pizza sauce
  • 1 1/2 cups mozzarella cheese, shredded

  • 1 (3 1/2 ounce) package pepperoni, sliced
  • 1/2 cup mozzarella cheese, shredded

Directions

  1. 1
    In a 9X13 baking dish, line the bottom with the sliced pepperoni.
  2. 2
    Cut all the biscuits in 1/4ths.
  3. 3
    In a big mixing bowl, put the pizza sauce, 1 1/2 cups shredded mozzarella, and the biscuits-- toss well.
  4. 4
    Pour the mixture on top of the pepperoni.
  5. 5
    Bake at 375 for 15 minutes.
  6. 6
    Top with the remaining 1/2 cup shredded mozzarella.
  7. 7
    Bake 15-20 minutes more-- til bubbly and browned.

    Of course, just about any topping can be added to the biscuit/sauce/cheese combo. And fat free cheese and turkey pepperoni can be used for a less-fat dish.

Wow!! I was skeptical. Way too easy to taste so good!! Thanks so much. I threw mushrooms on the bottom with the pepperoni. Can't wait to try other variations.

    This was a huge hit at our house. Not only does it taste great, the prep is so minimal that I think I had it in the pan ready to go in a little over 5 minutes! I really wasn't expecting it to be as good as it was. What a nice surprise. DS reheated leftovers and said they were just as good. Fast, easy, and tasty. This will go into the weeknight rotation for when time is short. Thanks for sharing. Made for Fall PAC 2009
