Here's a quick and healthy dessert or snack with flavours from the Caribbean. I'm adding this recipe for ZWT5 and haven't prepared it myself yet so I'm not sure how many balls it makes. This recipe comes from the Vegetarian Passport Cookbook by Linda Woolven.

1 batch (change servings and units)

Ingredients

  • 1 cup dried pineapple
  • 1/2 cup shredded coconut
  • 1/4 cup sesame seed
  • 2 tablespoons pineapple juice

Directions

  1. 1
    Add the first 3 ingredients to a food processor and blend until somewhat smooth.
  2. 2
    Add as much juice as is required to make the consistency right for forming into balls.
  3. 3
    Form into balls and allow to harden.

Made these to snack on and while they tasted good they were very sticky. I made with just the first three ingredients as the directions state to add just enough juice to be able to form a ball and I could do that with out the juice. The consistency even after sitting was that of sticky raw cookie dough. Don’t have a good suggestion on how to resolve that issue. Sorry these sounded good and I love dried pineapple.

    I would rate it higher (the flavor is really good) but I'm not sure how "hard" they're supposed to get. Mine are still a bit sticky and are the consistency of gooey gumdrops. Still edible, just not exactly what I was expecting. Made for ZWT5, RRR.

    These came out perfect for me, but I didn't use any juice. I got the no-sulfur, low-sugar dried pinapple from the health food store. I'd like to try them with home-dehydrated pineapple to get no added sugar. Pineapple's sweet. Why add sugar? My 2- & 4-year-olds loved these and frowned when I put some away for later. Thanks!
