Pineapple Casserole

Recipe #396684 | 35 min | 15 min prep | add private note

This was given to me by a good friend. At first glimpse, I think I said something intelligible like, "EWWWWW". But, I gave it try and my kids love it. I can't even get it to the plate. They eat it out of the pan as soon as it comes out of the oven. Now it's a traditional side at Thanksgiving. Thanks Toni!

SERVES 6 (change servings and units)

Ingredients

  • 1 (20 ounce) can pineapple chunks

  • 1/2 cup sugar
  • 3 tablespoons flour
  • 1 cup shredded cheddar cheese
  • 1/4 cup melted butter
  • 1/2 cup buttery cracker crumb (I use Club crackers)

Directions

  1. 1
Drain pineapple, reserving 3 tablespoons of juice.
  2. 2
Combine sugar and flour, stir in reserved pineapple juice.
  3. 3
Add cheese and pineapple chunks, mixing well.
  4. 4
Spoon mixture into 1 quart casserole.
  5. 5
Combine melted butter and cracker crumbs, stirring well.
  6. 6
    Sprinkle over pineapple mixture.
  7. 7
Bake at 350 for 20-30 minute or until crumbs are lightly browned.
  8. 8
*This is an excellent side dish to ham and I usually double this recipe.
  9. 9
    Enjoy!
