Peppermint Brownies

This recipe was passed on to me by my friend, Amy, who got it from another expat friend living in Bitola, Macedonia. The recipe calls for 3/4 tsp peppermint flavor extract but I usually double it so that it has a stronger peppermint flavor.

SERVES 12 , 12 3x4 inch pieces (change servings and units)

Ingredients

1 2/3 cups sugar
3/4 cup melted butter or vegetable oil
2 tablespoons water
2 eggs
2 teaspoons vanilla extract
3/4 teaspoon peppermint flavor extract (I usually put 1 1/2 tsp of peppermint extract)
1 1/3 cups flour
3/4 cup cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped nuts (optional)

Directions

Mix all the ingredients together. Grease a 9x13 baking dish and spread the mixture in dish. Bake at 350 degrees F or 180 degrees C for approximately 20 minutes.
