Peanut Butter Cup Cookie Ice Cream Pie

This recipe comes out of a Cooking for Kids cookbook. My daughter requested this for her 9th birthday "cake". It is pretty easy to do. If you can't find a readymade chocolate pie crust may I recommend Chocolate Cookie Crumb Crust for the crust. When I made this I did it in a 9x13 dish so I had to double the recipe. The recipe posted is for 1 pie. This makes a very rich dessert. I recommend small pieces and a glass of milk. LOL

SERVES 10 , 1 Pie (change servings and units)

    Place a large bowl in the freezer to chill.
  2. 2
    Mix peanut butter and honey in a medium bowl.
  3. 3
    Put softened ice cream in the large bowl from the freezer.
  4. 4
    Add peanut butter mixture and chopped peanut butter cup chocolate chip cookies to softened ice cream.
  5. 5
    Mix on low speed until blended.
  6. 6
    Spoon half of the ice cream mix into the crust.
  7. 7
    Spread chocolate syrup over the ice cream layer in the crust.
  8. 8
    Spoon remaining ice cream mixture over the chocolate syrup.
  9. 9
    Smooth over the top to make it level.

    Ganish with the chocolate Cool Whip.

    Keep in the freezer until just about serving time.

    You may need to let it thaw just a bit for easier cutting.

    You can also garnish it with cookie pieces or more chocolate syrup or chocolate curls if you would like.

    Freeze leftovers, obviously LOL!
