"Cobbled" together - ha, ha - from Deborah Madison's "Vegetarian Cooking for Everyone".

SERVES 8 (change servings and units)

    Preheat the oven to 375°F Lightly butter an 8- X 10-inch baking dish.

    Toss sliced peeled peaches with sugar, spices and 2 tablespoons of flour. Put the fruit in the dish, then cover it with the topping. Brush the top with the beaten egg and sprinkle it with sugar for a shiny, sparkly crust. Bake until the fruit is cooked and bubbling around the edges, about 25 minutes. Let the cobbler sit for a while before serving, but serve it warm with cream, yogurt, or ice cream.

    Mix the dry ingredients together, then cut in the butter using your fingers or two knives until it forms coarse crumbs. Stir in the buttermilk and vanilla with a fork until dough clings together when grabbed with your hand. If too dry, add a little more buttermilk until all the flour is moist enough to cohere. Spoon the dough over the fruit using a small spoon or your fingers to give the surface a cobbled appearance. For a smoother look, you can roll the dough and cut out biscuits or simply lay the whole sheet of dough over the fruit.
