Orzo Chickpea Salad

Lovely easy salad for summer bbqs. Feel free to add to the salad to suit your tastes, it is easily adaptable.

SERVES 4 -6 (change servings and units)

Ingredients

    Cook orzo until tender.

    Drain chickpeas.
  3. 3
    In a large bowl, whisk lemon juice, lemon rind, oil, garlic, mustard and herbs. Add chickpeas. Let sit a few minutes. Add the drained orzo.

    Crumble in the goats cheese.
  5. 5
    Let rest for 15 minutes before serving. May be served warm or room temperature.
