Middle eastern, one-pot dish which has fed the famished in our family and saved our sanity on occasion - it's that darn nice. Based on "One pot spiced rice and lamb" from Burke's Backyard (Australian TV series)

SERVES 4 , 6 cups (change servings and units)

Ingredients

Directions

    Chop finely the flesh of the capsicum, onion and garlic.
  2. 2
    Add oil to large pot, heat, then brown lamb mince.
  3. 3
    Stir in capsicum, onion and garlic.
  4. 4
    Add pine nuts, rice, raisins, cinnamon, paprika, white pepper and crumbled stock cube.

    Stir.

    Add water to cover mix.
  7. 7
    Cover and cook on low for 15 minutes.
  8. 8
    Add coriander and lemon, stir and serve.
