Noodles Frittata

This is so easy and my son loved it, even my fussy eater nice. Its combination/adjustment of few similar recipes that I come across.

SERVES 1 -2 , 6 wedges (change servings and units)

    Cook the noodle according to instruction, but put aside the seasoning sachet. If the noodles has dried vegie, cook them as well or you can add some frozen vegie. Drain noodle.

    In a bowl, lightly whisk eggs, seasoning sachet and noodle together.
  3. 3
    Heat butter in an oven proof pan at medium heat.
  4. 4
    Place the mixture into the pan and spread them evenly.
  5. 5
    Sprinkle the cheese over the mixture.
  6. 6
    Let it cook for 5 minutes over medium to low heat.
  7. 7
    Meanwhile, heat the broil/grill to medium heat.
  8. 8
    Move the pan under the grill for another 5 minutes or until top is golden brown.

    Serve with mixed salad or by itself with tomato sauce.

    Tip: You can also mix in some shredded chicken or anything you fancy to jazz it up.
