Nola Red Beans and Rice

Vegetarian Red Beans and Rice by a New Orleans native. Warning- this is a work in progress

SERVES 12 (change servings and units)

    Soak beans overnight or bring to a boil 2 minutes, then cover and soak at least an hour. Chop all vegetables and saute very slowly until they begin to carmelize. Drain beans and rinse well. Combine beans and vegetables in crock pot. Cover with stock or water and BTB. Simmer in crock pot for a VERY long time.7 hours?
