Nif's Great Grilled Potatoes

A quick side dish to whip up while you are making your grilled meat! Enjoy!

SERVES 4 -6 , 6 1/2 potatoes (change servings and units)

    Half bake the potatoes in the microwave. Cut them lengthwise, making sure to cut them the way that will make them sit flat. Make criss-crossed cuts about 3/4 of the way in the flesh of the potato - don't cut through!

    Mix all other ingredients and drizzle over the potatoes, a couple of teaspoons at a time so that it soaks inches.

    Prepare a grill to medium heat and place potatoes on upper rack in BBQ. If you don't have an upper rack, you can turn the grill to low but watch so that the potatoes don't burn. You can also make little foil nests to place them in but wrinkling up some foil underneath each one.

    When you can see that the butter mixture has soaked in and the potatoes look fully cooked, turn them over to add grill marks - only a couple of minutes.

Oh great recipe, I did it on a indoor grill and nestled the halves of the 3 potatoes (that I overcook in the microwave) in foil and spooned the butter over on a low heat and about 3 minutes before I was ready to serve I upped the heat, removed them from the foil and put the flesh side (non skin) onto the grill to get the grill marks - delicious. Would also like to try other flavours such as chilli and garlic in the butter or maybe herbs such as basil. Served with Oven Roasted Chicken With Lemon, Garlic and Rosemary by susie cooks and another side by Tisme of Creamy Matchstick Carrots. Thank you Nif, made for Every Day a Holiday Tag game.
