My Favorite Veggie/Bean Soup

I love this recipe because it is so versatile. I always change up the veggies and beans according to what I have on hand. I also have tried different spice combinations; basil, red chili flakes, parsley, sage etc. I used to hate veggie soup till I made this one! This recipe is very healthy as long as you don't add salt since the lipton packet already contains quite a bit. Can be frozen!

SERVES 8 -10 (change servings and units)

    Puy everything in a big pot and boil for 10 minute.

    Simmer till the veggies are tender (20-30 min.) The longer you simmer the better it tastes.
