Mushrooms on Toast

SERVES 4 (change servings and units)

Ingredients

Directions

    Heat the oil and butter in a heavy based pan and add the onion and cook until it has softened but not coloured and then add the garlic, button and field mushrooms.
  2. 2
    Cook until they have collapsed and then add the chilli, and season well with salt and pepper and then add the oyster mushrooms.
  3. 3
    When they have softened, remove from the heat and fold through the lemon juice and parsley.
  4. 4
    Meanwhile toast and butter the bread.
  5. 5
    Pile the cooked mushrooms onto the toast and then garnish with the enoki mushrooms.
  6. 6
    Eat and enjoy.

This is so delicious! Our family are a huge my mushroom fans so I couldn't wait to try this recipe. Little Miss and I ate it for dinner (hubby was working late) and it really hit the spot. I slightly over cooked the button mushroom and regular mushrooms (was distracted) but it didn't take away from the recipe. I had trouble finding enoki mushrooms (Looking in five stores. Safeway/Woolworths said they were out of stock, but they have them in as a regular line). Hubby really would enjoy this recipe on a juice steak. Thanks so much for a great recipe I'mPat.

    Well now, let me say firstly this is such a quick and easy recipe to make...... Now for the story. I went shopping this morning and they were reducing mushrooms, I got 2 kilo mushrooms for $2.00. I pounched on them, why dont ask me, I dont even eat them DH and DD do, so that was my excuse. DD was waiting home patiently for the chef to come home & prpeare her brunch. I didnt know what to make her, and remembered I saw this recipe a few days ago, so this was to be brunch. I followed the recipe but had no enoki mushrooms, not a problem I had mixed mushroomsm so I started.... DD has a lecture this afternoon so I cut back on the garlic a fraction, (feeling for the person who has to sit near her...lol) and also cut back on the the butter just a touch, thinking it would be better for her. So with all that said DD's comments, very yummy, and very nice, BUT mum next time it just needs a little more garlic and butter!!!!!!!!! SHEESH! Great recipe Pat, I won't cut anything out next time, and yes DD says there must be a next time..... she thinks maybe even for dinner tonight!!!
