A quick, tasty meal for two.

    Preheat the broiler. Heat the butter and oil in a nonstick pan. Fry the mushrooms for 4-5 minutes. Add the spinach and cook for 1 minute. Set aside.

    Add the eggs to the pan, season. Cook for 4 to 5 minutes until the underside is golden and the egg is almost set, then scatter the mushrooms, spinach and cheese over.
  3. 3
    Cook under the broiler until the cheese has melted. Cut in half and serve with crispy fried potatoes.
