This recipe certainly brings the humble carrot to a special vegetable status.Found it in a charity cookbook a few years back but can't recall the name. Enjoy....... Servings listed are approximate.

SERVES 4 -6 (change servings and units)

    Slice carrots and cook in boiling salted water until tender - about 20 minutes.

    Drain.
  3. 3
    Melt butter, add almonds and cook over medium low heat, stirring, until a light golden color.
  4. 4
    Add carrots, sugar, coriander, cinnamon , cumin, cayenne and salt.
  5. 5
    Cook, stirring over low heat until most of the liquid has evaporated and carrots are shiny and glazed, about 3 - 5 minutes.
