Mom's Most Excellent Oat Bran Muffins

My dear mother found this recipe out of newspaper clipping. The recipe originated from a hospital. This low fat recipe is chocked full with carrots, grated apples, raisins and chopped pecans. They are excellent

SERVES 12 (change servings and units)

    In a bowl, combine flour, oat bran, baking soda, baking powder, salt, cinnamon, brown sugar, grated carrots and apple, raisins and the chopped pecans.

    In a measuring cup, add vegetable oil, eggs, milk and vanilla.

    Preheat oven to 375.
  4. 4
    Combine the wet ingredients to the dry and combine until just moistened.
  5. 5
    Place batter in prepared muffins. Bake for 18 - 20 minutes or until done.
