Mom's Chocolate Chip Bran Muffins

My mom made these all the time when I was a kid- they have lots of fiber and the chocolate makes them kid-friendly with a bit of sweetness. Now my husband devours them as well!

SERVES 24 , 24 muffins (change servings and units)

    Pour boiling water over 100% bran in a small bowl.

    Beat sugar and shortening until creamy.
  3. 3
    Add eggs, buttermilk and bran flakes to sugar mixture.

    Mix well.

    Sift flour, baking soda and salt together. Blend into egg mixture.

    Stir in bran mixture.
  7. 7
    Spoon into tin cupcake wrappers.
  8. 8
    Bake at 400 for 15-18 minutes.
