A nice soup for a cool evening of comfort food.

SERVES 8 (change servings and units)

Ingredients

Directions

    Sautee onion in two tablespoons of chicken broth.
  2. 2
    Add the rest of the chicken broth, leek, and beans. Bring to a boil.

    Reduce heat and simmer until beans are done (about two hours).

    Add evaporated milk to pan.
  5. 5
    Remove 1 cup of bean soup and blend well, return to pot.

    Stir in fat free cheese until melted.
