Mixed Vegetable Kugel (Passover)

This is a delicious, super-easy kugel for Pesach or all year. It doesn't contain potato starch or matzo meal and is suitable for those avoiding gluten. I found this great recipe on an online forum.

SERVES 12 (change servings and units)

    Preheat oven to 375°F and grease a 9x13 pan or two 8-inch pans.

    Saute veggies (aside from potatoes) till limp and slightly colored.
  3. 3
    Beat eggs, salt and pepper in large bowl.
  4. 4
    Grate potatoes.
  5. 5
    Add vegetables and eggs to grated potatoes and mix well.

    Pour into prepared pan and bake 45-60 min till brown and crusty.

I made this recipe for a potluck, to try to get the kids to eat vegetables with out it being super obvious they were eating something green. Many of them actually did eat it! And it even got some compliments from other grownups. It was easy and quick, and came out well. Next time I'll replace the celery with a different vegetable (I'll probably try zucchini) as I found the celery flavor a little too strong, and I think it turned off some of the kids. Thanks for this recipe — it's exactly what I was looking for.
