Microwaved Scalloped Corn

SERVES 4 , 1 side dish (change servings and units)

Ingredients

  • 2 eggs

  • 1 (14 3/4 ounce) can cream-style corn
  • 2/3 cup milk
  • 1/2 cup saltine crackers, crushed
  • 2 tablespoons butter, melted
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • pepper
  • paprika

Directions

  1. 1
    In a bowl, beat eggs.
  2. 2
    Stir in the corn, milk, cracker crumbs, butter, sugar, salt and pepper.
  3. 3
    Pour into a greased 1-qt. microwave safe dish.
  4. 4
    Cover and microwave at 70% power for 6-7 minutes or until a knife inserted near the center comes out clean.

    Let stand for 5 minutes before serving.
  6. 6
    Sprinkle with paprika.
