Mexican Shepherds Pie

A different spin on Sheperds Pie and very warming to eat during those really cold, winter nights. This is something that I just came up with on my own, throwing stuff together. It would probably be good with some diced tomatoes and black olives. It is very easy to make and good by itself.

SERVES 6 , 1 casserole (change servings and units)

Ingredients

  • 1 lb ground beef

  • 1 (12 ounce) can sweet corn

  • 1 (1 1/4 ounce) package taco seasoning
  • 1/2 cup shredded cheddar cheese

  • 1 (4 ounce) package Jiffy cornbread mix

Directions

    1. Preheat oven to 400 degrees.

    2. Brown the meat in a skillet.
  3. 3
    3. Add taco seasoning and a little water as per the instructions on the seasoning packet.
  4. 4
    4. Prepare the cornbread mix as instructed on the box in a bowl.
  5. 5
    5. After the meat is done, pour into a 9" by 9" casserole dish and mix in the corn and a handful of the cheese. Stir together well.

    6. Pour the cornbread mix on top of the meat mixture in the casserole dish.

    7. Sprinkle some cheese on top of the cornbread and bake in the oven for about 20 minutes or until a tooth pick comes out clean. Serve hot!
