  • Chicken Tortilla Casserole California-Style

My family loves, loves, loves this dish. Next time I will triple this recipe and make 6 8" x 8" freezer meals. I may even try to alter the preparation, use large tortillas and make up as burritoes, then freeze.

  • Poverty Meal

This also freezes well. I used square 25oz Gladware and followed the same defrost and reheating as the dumplings below.

  • Caroline's Quick Chicken and Dumplings

This is very tasty and freezes wonderfully in 2 cup Gladware bowls. When taken straight from the freezer, I vented the lid and microwaved for 10mins @ 30% power, then 2-3mins in a 1100 watt oven.

  • Mrs. Geraldine's Ground Beef Casserole

This freezes well and is easy to assemble. I use 8" x 8" square disposable pans, assemble as the recipe calls, wrap totally in plastic wrap, then cover with aluminum foil, then slip into gallon size freezer bags and seal using a straw to make all airtight. I'll then try to get creative with my printer and shipping labels. It may sound like a lot of work, but I've never had freezer burn even with the one way in the back that was over a year old.

  • Banana Bread

My mom doesn't like banana bread but she loved this and ate 3 nice sized slices. I was planning on freezing this but it did not last that long even after doubling it. Next time I will triple or more and make it while all are at work and it just might make it to the freezer, lol.

  • Chocolate Rainbow Krispy Treats

I did not plan to freeze this, but to have something that would be sturdy and keep a while for our family who have been spending a lot of time at the hospital with my nephew who was badly burned in an accident.
