"Make a big pot of this flavorful Mexican meatball soup and enjoy leftovers all week long. The meatballs are made with pork and beef, but ground chicken, turkey or lamb will all make tasty substitutes. The fresh tasting cilantro pesto is a must to liven up the flavors, but if you don’t have time to prepare it, simply add a sprinkling of chopped cilantro to each bowl.Keep the meal south of the border with this tropical salad made with pumpkin seeds, pomegranate, papaya, arugula and Roquefort cheese. The orange shallot dressing is just the right amount of acid to boost the rich ingredients. Mango, watercress, and cubes of melon would also work well in the mix.Made with tequila, limeade and sweetened condensed milk, this pie is truly a frozen version of the refreshing cocktail. The crust is made with crushed pretzels to add that salty lick, but to keep it on the sweeter side, use a graham cracker or chocolate crumb crust in its place."
