I made most of this meal for dinner last night and it was a resounding success. The Crock Pot Corned Beef was delicious, tender, yet didn't fall apart when it was cut. I cooked my potatoes and carrots in the liquid from the crockpot, after the Corned Beef was done, and steamed my cabbage in the microwave, like I do with most of my veggies. Grandma Dolores' Irish Soda Bread was the best I have ever made. I used buttermilk, instead of souring my milk, which was a good substitute. The Mini Grasshopper Cheesecakes were well liked, too! Too sweet for me, but I am a diabetic and didn't need any more than the one I tested after they were cooked, yesterday morning. Yes, it is a 5-Star meal!! Good job, HeatherFeather!!
