  • Zucchini Casserole

Made from Jill's blog with scrambled bulk sausage, spaghetti sauce, and lots more rice. Cantaloupe for dessert.

  • The Best Easy Beef and Broccoli Stir-fry

Served with rice. Nice with snap peas added, but probably won't make again.

  • Sensational Spinach Stuffed Shells

Served with a green salad, I think, and something else...? Oh yeah, I created a stuffed zucchini to stretch my 3 smallish zucchinis to feed 6. Stuffed with garlic bread crumbs, zuchinni guts, and diced fresh tomato with olive oil and salt. Mixed reviews.

  • Best Ever Easy Sloppy Joes

On buns. With brussels sprouts. Made in the crock pot without browning the meat first. Added 2 c extra water, and then had to thicken later with flour slurry. Texture kind of blecchy. Also color. Tried to improve with red food coloring which resulted in hilarious hot pink sloppy joes. Thank goodness for Kitchen Bouquet.

  • Easy Crock Pot Roast

With onions, carrots, potatoes, and gravy. Also made Yorkshire pudding, and Cottage cheese fruit salad from the Lion House cookbook. Seems like there was a green vegetable, too. Maybe roasted broccoli?

  • Grilled Salmon

Straight up with salad(?) and steamed cauliflower

  • BBQ chicken

Boiled some chicken and finished it up on the grill. Served with microwave baked potatoes, cucumber/tomato salad, and watermelon wedges

  • Tomato Cheese Toast

On whole wheat bread. Simple. Yum.
