    The star appetiser has been chosen to symbolised the Southern Cross stars, which features on our national flag. I chose spring rolls to reconise the influence of the areas Chinese population who made their voyage here during the Gold Rush in the 1800's.

  • Bruschetta

    Bruschetta is one of my favourite entrees, I choose to serve this dish on Australia day to reflect on the Mediterranean population who migrated to Australia after World War II. Which, incidentally, also happened to include the previous generation of my family.

  • Traditional Australian Summer Pudding

    Last year on Australia Day it was very hot and there was total fire ban throughout Victoria (meaning no one was allowed to light a fire due to the weather/poor hot conditions and the likelihood of resultant wildfires). I choose a desert that doesn't need to sit in the oven which only serves to make my house even hotter and also a desert that will exhibit our finest fruits of the season.
