"What to eat on the Sunday of the July 4th weekend? It should just be DH and I, but you never know when our son and his wife will drop in ;). This menu is loaded with things Kat is allergic to like beef, root vegetables and her worst allergy: coconut. She is away for the holiday so DH and I will enjoy some of our old favorites."

Cream of Coconut Cake

The perfect time to have coconut: when Kat is not in the house. She is extremely allergic to coconut and we went for twenty years without it. This recipe got a bad review because its chef knew this cake so well that she had difficulty breaking the steps down. Now that she was able to revise it, I think it deserves a fair shot.
