    This recipe is perfect but omit the sugar as it will make the butter too sweet for the chops. This butter can be made a day ahead. Shape this butter into a 1 1/2 inch log, wrap in wax paper and chill. Top each veal chop with 2 thin slices of the orange butter just prior to serving.
