"My wife is the supervisor of a hospital’s laboratory and we often entertain folks from the hospital. She has informed me that she would like to have the new Laboratory Director come to dinner tomorrow night and that he is from South America, though not sure which country! She ask can I make it happen, and by the way, since she bragged about my cooking he was wondering if I could do some dishes from South America. Naturally, I can make it happen with this menu: For appetizers we will have recipe#305023 this will be made tonight and be ready for dinner time tomorrow since it needs at least 12 hours to set up the flavors. Will serve this with cold deli ham slices and cheese. The main dish will be recipe#252740 which has been made ahead of time (OAMC) and is in the freezer. All I need to do is remove it from the freezer tonight. Will serve this with rice. One of my side dishes will be recipe#248544 another frozen dish that was made for OAMC purposes. This too will be removed tonight. My second side dish will be recipe#203932 is a simple greens (collards) which should add some color. Dessert will be a fruity concoction with mangos, recipe#51149 Oh and since I’m not sure exactly which country this new Director is from, I have tried to incorporate as many different countries with my menu as possible; the appetizer is Chilean, the main dish as well as one of the side dishes, is from Brazil, with Columbia being represented with the dessert. "
