  • Mini-Salad in Parmesan Crisp Cups

If you're not a Gourmet Chef, this let's you pretend and get away with it! 2 Tblspoons of finely grated parmesan (yes, the green-can kind). Drop them onto a parchment lined baking sheet into a nice little circle. Put them in your 400-degree oven for 5-6 min. Take them out--the discs they create will be very soft, but use a good spatula and peel them off right-away. Drop each disk onto an inverted muffin pan--pinch sides to form a circle, if necessary. Let cool completely and store in an air tight container in the fridge (up to 2 weeks!). Fill with anything from mini Ceasar sald, shrimp or crab salad, or whatever your tastebud's desire. Yummo!

  • Cheese & Crackers

Choose your favorite cheeses--table water crackers may be fragile, but they totally enhance room temp. cheese. If you can't wait for cheese to come to room temp, or are uncomfortable with table water crackers, go for Triskets. Just get what you like and enjoy--leave'em out all evening.

  • Creole Shrimp and Lobster Bisque

This Paula Deen recipe is awesome. Very flexible--if you don't want the fuss or expense of lobster tails, just omit and increase your shrimp--or substitute pasteurized crab meat. The Creole seasoning is that "mmmm-factor." I use "Slap Ya Mama" Creole seasoning, but choose your own favorite--it's bound to satisfy!
