I'm a development director for a local nonprofit (Comprehensive Therapy Center), and in my spare time I make jewelry and garden. I love to cook, though I don't have a lot of time for it

I'm a vegetarian - but my kids aren't. So I look for dishes where the meat can be separated from the main dish, or where the meat can simply be left out. A little creative problem solving makes this a fairly easy task.
