about me

I'm a busy mom who works two jobs. So needless to say I have a hectic schedule and don't always have time to make a good home cooked meal. I was browsing the internet looking for some good recipe ideas and found this fantastic site! I am anxious to find some fun kid friendly recipe's on here that I can prepare ahead of time so they are ready to put in the oven for dinner the following day. I am a type 1 diabetic and was diagnosed only 3 years ago and still looking for good, healthy meal ideas.

Favorite Foods:

I love Italian dishes but most are so heavy in carbohydrates. My favorite meal is a beef roast with carrots and potatoes. Although I tend to live on quick meals like salads or grab and go things like apples, banana's, sandwiches on whole grain breads, etc.
