I am a working mom of 2 toddlers. I work 1 full-time job, and one part-time job. So I do a lot of Once-a-Month & Freezer Cooking. Unfortunately DH doesn't like many veggies, so I mix them into recipes.
I really love to cook, but I don't have a lot of time for it. So most of my recipes are either quick or freeze-able.
I'd love to have more time to make desserts, but I just really suffer from lack of energy to make them. Plus, I really don't need to add those calories to my diet (but they're SO good!).
This year, I want to do better with watching what I eat, and making it better for me (more fiber, more veggies, less fat).
I love seafood & veggies, but my husband does not. He's more of a meat & potatoes guy. My kids have very little they won't eat.
