I live at home with my parents and we all live really busy lives. Still we try to sit down and have dinner together every evening. We make this easier by cooking a few large dishes once a week and then reheating. When we don't get home till 8pm sometimes it makes dinner a breeze.
I also work as a nanny for an Indian family. Their 15 month old son loves soup, so I'll often make him fresh soup. I sub ground turkey and chicken broth for anything requiring beef, and so far it's always worked.
Anyting I've made myself from scratch, although right now I'm on a soup kick.
