Life is so full of possibilities, how can one ever be bored? At any given time, I probably have my nose in 3 different books and 5 ongoing projects. I love to learn just about anything, love creating new things (whether it's writing a piece for my South Korea weblog, a delish dish, or a well-framed photo). My most recent interests are along the lines of the mind-body connection, holistic health, Eastern religions, and the wisdom of ancient cultures. In the next few years, I see myself continuing to teach overseas, backpacking through Asia and beyond, and hopefully studying a second language beyond the basics...
Fruit, ah, I love mangoes, peaches, and strawberries particularly... I'm in Asia right now, so miss quite a bit of the Italian, Mexican, and smattering of other cuisines I enjoyed back home. balsamic strawberries, strawberry-spinach salad, raw corn salad and grilled salmon... Fresh avocadoes, fish tacos with mango salsa, Cuban black beans on corn tortillas with fresh cilantro and guacamole, angel hair pasta tossed with fresh Basil Pesto... crusty loaves of bread with bruschetta and herbed dipping oil... pumpkin soup... home-made roasted red pepper hummus... to name a few. Don't get me wrong, Korean food is spectacular, I hope to experiment with it more in the coming months...
