I love to cook. It is an extension of my creative side. Preparing a meal is the same to me as preparing a canvas. You have to get the basics right or the finished product is not any good.
I find that organizing all the ingredients is the same as getting my paints ready. When I'm all set up, I don't waste any time searching for something or having to go to the store to get it in the middle of prep time.
I hear people say that they are organized in a mess. I can't imagine how they do it. It just wouldn't work for me. I find comfort in being able to lay my hands on whatever I need and not rumaging through the same stuff I rumaged through the last time I needed it.
Cooking a meal for a crowd is no problem for me since in my younger days [I'm now 70], I owned two restaurants and what you learn from running the kitchen is a lesson for life. I just pours over into everything I do. When the meal is served and I see my family and friends' eyes light up with delight, it is the biggest reward I can get.
My advice to all cooks is...get organized and you will enjoy cooking.
