I love to try to make up a great meal from leftover items in the fridge, or from our weekly purchases from the farmer's market. Although I like to try a recipe "as written" the first time, I readily swap and add ingredients to use up what's on hand. My philosophy is, why use a red onion if you prefer white onion, or use spinach if you prefer kale? Mix it up! It's only one meal, and it's fun.
