This is a picture of me and Joe..DS#2 (along with a favorite nephew) who 12 years ago was diagnosed with bone cancer. By the time it was discovered he had metastatic disease of both lungs. He's had numerous surgeries to remove both the diseased leg as well as to countless surgeries to remove lesions from his lungs. At that same time my oldest son was in a car accident that left him with a closed head injury and very very close to death. The organ transplant team was on standby waiting for the word. Through God's grace and mercy little by little he made a miraculous turnaround and comeback that to this day astounds many.
Needless to say I packed on 40 lbs w/in 2 years due to stress and not working and just a combination of a lot of things. And so after some serious thought and determination I decided to get healthy. I've always been an avid walker but just decided two years ago to step it up a notch and have taken up running. I do enjoy it and especially the health benefits. I also follow the WW plan whenever I find myself wandering back to old habits.
As a final word about my 3 sons, my oldest is 29 (lives on his own which in itself is a miracle due to the amount/extent of his injuries from the accident).
My #2 son Joe is 25 and lives at home after living for a time in TX attending college on a wheelchair basketball scholarship. He has a full time job and gets around quite well w/a prothesis. He now has been in remission from cancer (osteogenicsarcoma) for 6 years.
3rd son is also living at home and is 23. My husband and myself who have been married for 30 years are very blessed to have 3 sons who are healthy and keep us active and of course me in the kitchen which is wonderful for me as a mother.
I know God never wastes an experience and so belive with all my heart that these life challenges that our family has been thru has given us strength, wisdom and direction, perseverence for the many minor obstacles that are placed along our path of everyday life. Thank you Jesus!
I’ve also given up most meat and mainly eat a diet of fruits/vegetables. I do have a sweet tooth and basically I'd rather bake than cook. That's why I'm just so delighted to have found this website and almost feel like I've found a new addiction. But, a healthy one!!!
I’m a school bus driver and also a coffee barista at a local coffee shop. I love the Gooseberry Patch cookbooks and also any/all church cookbooks and of course the Taste of Home magazine. The items I love to cook/bake with are items that I normally have on my shelf at any given time. I didn't find these passions until later in life and now I love it!! I love to knit and read also.
