I'm a farmer at heart trapped in the 9 to 5 world. If I didn't need the paycheck, I'd love to spend my time in a huge garden and preserve a lot of fresh food for the cold months of the year. I'm inspired by Barbara Kingsolver's book Animal, Vegetable, Miracle.
I avoid meat for environmental reasons. (It takes so many resources and inputs to feed cattle, hogs, etc. and the pollution risks of confinement operations are huge.)
I like the way this site is so searchable and the reviews really give me a good idea what to expect. I also have found new adventures in buying unusual produce and using the search feature to pick out a new recipe to try. I've found many winners!
I'm not sure what it is about the recipe for Southwest Spaghetti Squash, but that is my favorite recipe. Simple, healthy and delicious!
Though I love anything rich and decadent — don't we all — I've found a few tricks to lighten things up and rarely does it hurt the flavor.
