I love to eat and I enjoy cooking but don't have a lot of time to spend in the kitchen. We mostly eat out in restaurants since we are empty-nesters now. Both of our kids live out of town, so we don't see them often. I just bought the pasta roller attachment for my Kitchenaid Mixer, so am anxious to try it out. It also has a fettucini cutter. I have the regular manual pasta rolling machine, but this should be easier and quicker. My favorite things to cook are New Mexican food - I grew up in Albuquerque, so I know how to make the real thing. Also like to make homemade pasta, stir fry and homemade desserts and candy. Around the holidays I make English Toffee, Pecan Turtles, Baklava, etc for my grown kids. I can only make those things when they're around to eat them, because othewise I would eat it all myself! I love all of the Junior League regional cookbooks - so many great recipes!
Red and Green chile enchiladas - Albuquerque style. Teriyaki chicken, eggs Benedict, huevos rancheros, quesadillas, Pecan pie, caramel pecan bars, Italian Cream cake, Cream of mushroom soup, French onion soup, Philly cheesesteak sandwiches, chicken mushroom crepes, turtle cheesecake, and I could go on and on...
