I've lived lots of places - from CA to London. Currently retired in Arkansas. My favorite all time cookbook is Cotton Country from Monroe, La.
I've spent a lot of time in Louisiana over the past 30+ years and love the food there. Most of it is NOT hot or spicy. It's hard to find a bad meal there if you avoid the national chains.
Best restaurant in the world (literally) - Commander's Palace in New Orleans.
