I'm working to come away from an 12 year vacation from food (aka...eating disorder) and trying to build a diet that is both healthy and well-rounded. I have gained some weight and lost some as well. I'm on here too much, but I LOVE to cook for my parents, son, and friends. I look so forward to making treats for people on birthdays and holidays...it's a way that a gal on a limited budget can still give a gift that will hit the spot. :D
I like to cook using my crockpot or oven rather than stovetop. If there are too many things cooking on the stove, I get frustrated with it all. The exception to my stovetop rule is when I make a stir fry.

I'm going on 30, my son is 6. Eeeeks! I graduated from college back in 2000, but lacked the confidence to pursue work in my field. All these years later, I have a dust collection on the ol' degree. I've been out of work for almost 2 years now, after having 2 seizures (they took my driver's license away). As my son starts school, I'll be looking for a job to help get our lives back on track. Eventually, I hope to turn my love for cooking, my psych. degree, and my understanding of what it's like to suffer with an eating disorder into a career, possibly nutrion counseling or eating disorder therapy, which are both badly needed in good ol' WV.
I appreciate all of the amazing, healthy, quirky, sometimes really bad recipes on here! If you try any of mine, I certainly hope you enjoy them!
Chocolate...not milk chocolate but dark and semi-sweet. Anything starchy! Rice, pasta, chocolate...and potatoes...and chocolate. Sometimes vanilla if there's no chocolate.
Sushi, tilapia, shrimp...
Creamy foods are also a favorite, but I find it hard to indulge at this point in my life. Alfredo is my comfort food. The best bbq ribs are at Longhorn, best meatloaf is at my house. ![]()
Fruits: Bananas, apples, strawberries, and blueberries, although when I was pregnant, I pigged out on canteloupe.
Veggies: Mushrooms (mushrooms belong in every dish!), spinach (just not too much that you don't taste the mushrooms!), broccoli, onions, peppers, carrots, corn...it's all good.
