My name is Mindi, I'm a mom to a beautiful son. I love to cook, try and share recipes. I love to take recipes and adapt them to fit my weightloss program.

I also love to read, cross stitch, and most importantly take care of my son. Right now he is involved in Cub Scouts, Tae Kwon Do, and little league.

Favorite Foods:

I love all types of foods. Mexican is top of the list. Some of my favorite cook books are from the author Joanna Lund. She takes basic things from a normal pantry and turns them into master pieces. And she includes the Diabetic Exchanges for all her recipes.
