I'm a housewife with a three year old and 1 year daughter.
I love cooking, and I especially love cooking large amounts of soup for future use. Since I stay home, we don't have much money so I do a lot of "What is about to go bad" cooking. You know, the parsley's about to go, what can I make? The ground beef is at the end of how long we can keep it in the fridge, and we don't want hamburgers. The celery is wilting... why do I buy so much celery, anyway?
I suppose the recipes that I could consider definite hits with my family are "Beefy Garbanzo Casserole" (from a Better Homes and Gardens cookbook), "Mad Dog Rice Salad" (from the "Whole food for Whole families" cookbook) and a "Spanish Omlette" (from "What to cook when you think there's nothing in the house to eat", my bible).
