I am an American living in Greece. Although I have always enjoyed collecting recipes, for a long time I was doing only routine cooking, nothing adventuresome at all. Since January, when I started a serious weight loss effort, I have been cooking up a storm. It's been very interesting trying to find tasty low-fat, high-fiber recipes for which the ingredients are available in Greece.
Caponata is my most recent favorite - I am only sorry that eggplants are only available in the summer. I've recently re-discovered my pressure cooker and invested in two cookbooks and I have found that with care in timing, the food is not overcooked. I have been unable to buy a crockpot in Greece - the concept is unknown here, to my sorrow. I have found the pressure cooker to be a great help for quickly cooking when I come home from work.
